A simple summer recipe for healthy sweet loving people
Really delicious, sweet and surprisingly not too coconutty...
This is our family go to sweet when we don't want to over indulge in sweets and deserts, or just to curb a sugar craving. I swear that it works! I've tested it many times.. Preparation time is 10 minutes max...
You will need the following ingredients:
-2 cups unsweetened organic grated coconut (you can find this in bulk at the Herb and Spice)
-3 fourth cup organic coconut oil
-1 third cup carob powder (of course you can use cacao powder instead)
-1 tiny pinch of Himalayan pink salt
You will also need a mixer and some silicone molds to make the treats.
The Narruto molds are very popular amongst certain friends of mine.....but of course, there are other fun molds
Start by putting the grated coconut in a mixer and mix for 2 to 3 minutes until coconut starts to become oily. Add the carob and salt and mix 1minute more. Then add the liquid coconut oil and mix again for 1 to 2 minutes until very well blended and easy to pour.
Pour into molds (you will need about 2 regular size molds) and put in a freezer or fridge to harden. Unmold and keep in a ziplock in the fridge or freezer. I prefer to keep in the freezer but it is not necessary. It stays nice and firm (in the frigde or freezer) and it's a cool treat to eat when you have the sugar blues.
